
Colour Commentary:
This was the very first dish I ever made with Quinoa, and let me tell you, not only is it really delicious, it’s become a staple. For those nights where I’m not sure what to make for dinner, it’s a good go-to recipe. More often than not, you typically have all the ingredients to make it. I think it was intended on being a side dish, but I can easily (and willingly) eat it as my main.
Ingredients:
- 1 tbsp butter or olive oil
- 1 small onion, diced
- 3-4 cloves garlic, minced
- 2 cups chicken broth broth
- 1 cup uncooked quinoa
- 1/4 cup Parmesan cheese
In a medium pan, sauté the onion and garlic in butter or olive oil over medium-high heat for 3-5 minutes, until onions are soft. Reduce heat to medium low.
Add the broth and quinoa. Cover, and allow to simmer until liquid is mostly absorbed and quinoa is cooked, about 15 minutes.
Remove from heat, and uncover and gently mix quinoa to distribute any excess moisture for approximately 5 minutes. Top with Parmesan cheese.
Makes 3 servings.
