Ingredient of the Week: Broccoli

Mom doesn’t have to try and convince me to eat these veggies anymore! Once a vegetable I’d push to the side and avoid eating, it’s become one of my favorite things to nibble on. Whether raw or cooked, these little green tree-like things pack a nutritious punch.

Broccoli’s noteworthy nutrients include vitamin C, vitamin A (mostly as beta-carotene), folic acid, calcium, and fiber. Research shows that these mineral may play a role in the control of high blood pressure, and it may work to prevent colon cancer. As per most veggies, eating them raw will give you a more concentrated dose of their nutrients. Little known fact about them: Botanically, broccoli belongs to the cabbage family.
